An Ikea Oatmeal Cookie Knockoff Recipe

We shared this recipe on Keeta Collection, and it is worth another share.  Every single time I make these, my husband is in love with me all over again ;)  
It started with a trip to IKEA .    As I was dreaming of redecorating the entire house, my hubby was drooling over  their oatmeal crisp cookies.   Since he was such a  good sport shopping all day, I decided to bake some for him.    I chose a random recipe from an online site.   It was a winner.  He was in heaven, with a tall ice cold glass of milk, they were delicious! 
Here is the recipe, wish I had a name to credit, but couldn’t find one.
  • 1 cup soft butter
  • 1 cup firmly packed brown sugar
  • 1 cup white sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1-1/2 cup flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 cups Old Fashioned Oatmeal (not quick cook)
  • 1-1/2 to 2 cups raisins

  • Directions 
  • Preheat oven to 350
  • Grease or spray cooking sheets generously
  • Cream butter and 2 sugars until fluffy
  • Stir in vanilla then add eggs one at a time beating well after each add
  • Sift flour, salt & baking soda together
  • Add to creamed mixture
  • Stir in oatmeal and raisins (may need to mix by hand, I do)
  • Drop by rounded teaspoons 2″ apart ( do not crowd they do spread) on to greased sheets
  • Bake for 10-15 minutes only DO NOT OVERBAKE, (they will burn and are too crispy)
  • Cool 1 minute on sheet before removing to racks to cool completely
  • ENJOY!!
